Asian Chicken Chopped Salad

You know what I love about cabbage? The infinite shelf life. I've been meaning to make this salad for a few weeks but kept putting it off. So when I finally got around to it today, I was sure I was going to have to buy new cabbage. To my pleasant surprise, it looked brand new - I just peeled away a few of the outer leaves (just in case) and started chopping.

This salad never excites me UNTIL I start eating it. It's simple and totally healthy but the mixture of the salad dressing and the peanuts gives it that extra oomph. Even my husband always loves it. 

This recipe is another one from Dinner A Love Story (they call it the "redemption salad" which makes it sound wildly, healthy, right?) - which seriously, if you have kids under the age of five, you should own the book and study the blog. They have some many delicious meals tailored to those who are parents of the young.


And I love their whole theory of "deconstructing" the meal for the kids - it works every time for us. Take this salad for instance - my kids won't eat it mixed up like we do. But if I section out the carrots, cabbage, chicken, spinach, and nuts into little islands on their plates - it's a total winner. Minus the salad dressing, of course, which is a major no-no with MY under five set.

Everything can be made ahead of time and if you're really looking to save time, you can use leftover chicken (or a rotisserie chicken - sometimes we find ourselves wandering around Costco in the afternoon just because - and the $5 chickens are sometimes too good of a deal to pass up).

Asian Chicken Chopped Salad (from Dinner A Love Story)


Salad Dressing

    • 1/3 cup of grapeseed oil
    • 3 TBSP rice wine vinegar
    • juice of 1/2 lime
    • 1 tsp fish sauce
    • 1 tsp minced ginger
    • 1.5 tsp brown sugar
    • 1 chopped jalapeno (adjust according to your level of "heat")


    • Couple of handfuls of shredded cabbage
    • handful matchstick carrots
    • handful of chopped spinach
    • 1 bunch of chopped scallion
    • 2 chicken breasts - shredded (cooked - or whatever leftover, left around chicken you've got) 
    • handful of chopped peanuts
    • sesame seeds (we used black ones) 


    Mix together the dressing. Mix together the salad ingredients. Mix together the salad dressing and salad. 

    That's it!  

     P.S. I love recipes that use measurements like "handfuls." No pressure, you know? Also, there's totally no chicken in my salad yet. We may or may not add it depending on whether I feel an intense need to get out of the house and wander Costco for free samples. Sometimes they have ICE CREAM.
